Watermelon, Feta & Basil Appetizer

Being that sweet juicy watermelon is pretty much the essence of summer, I decided to try this new recipe at our 4th of July celebration last week. This no-cook appetizer is easy to make so you don’t have to sweat the details – and because the flavor is light and refreshing, it’s perfect for any summer party. Plus, it is as pretty as it is tasty.

Watermelon, Feta & Basil Appetizer

Small watermelon, cut into 1/2-inch thick slices and then cut into 1-inch square pieces, seeds removed
Block of feta or cotija cheese, cut into 1-inch squares (1/4 inch thick)
Fresh basil leaves (or you could substitute fresh mint)
Good quality balsamic vinegar, for drizzling

Place the 1-inch watermelon squares on a serving plate. Top each with a piece of the feta and a fresh basil leaf. Run a toothpick through the middle and drizzle a few drops of balsamic vinegar on top. Serve immediately.
